10 Minute Skillet Granola, Mom's Oven Baked Rice Pudding, Chicken Pot Pie {For A Crowd}
We’re settling into the cold season here at The Estates! We’ve got the coop all ready for winter and I’ve made some homemade scratch for the ladies as a treat. It’s a snack they get just before bed that helps them stay warmer overnight. It’s a great energy source for them and they love scratching in the leaves to find every last piece.
Hence the name maybe?!
The first year I had chickens I ran out to the coop constantly, especially during snow storms, to make sure they were okay. Now I’m a little more relaxed and confidant that they’re pretty hardy little things and they’ll be fine. They’ve got a nice dry space, lots of good snacks and greetings from me as I lift the lid of the nesting box.

Apparently, I’m in my chicken lady era.
The Mr. has the homemade ice rink all set up for our favourite little person. It’s not a very big space at all but so many hours are spent skating on it that it’s totally worth the work. As a family we really love an outdoor winter fire while others are skating around.
A warm bevvie doesn’t hurt either.
Speaking of a warm winter fire, the Hubs has thankfully spent the year stockpiling wood so that I can continue my love affair with the wood stove. Lighting a fire is literally the first thing I do when I walk in the door. Those first few crackles of wood and paper burning helps me relax and rest for a second, as I transition from a stressful work day to home.
The Hubs says I burn through wood faster than I burned through our kitchen reno budget.
And that’s pretty heckin’ fast.
Speaking of kitchens, here are some of the recipes we’ve been loving this week. And unfortunately the colour palette for my photos is very beige and plain. But don’t let that fool you! This is all delicious homemade comfort food at its best.
