Living in this old farmhouse has been such an amazing experience for me in so many ways. My husband and I finally realized our dream of living in the country, fixing up an old homestead and eventually easing into retirement so we could enjoy country living in peace.
Sounds romantic doesn’t it?!
I say this tongue in cheek because, yes, we do absolutely LOVE it here but the cost of fixing things up has assured that we won’t be retiring any time soon, HA! You know one of the things that we still haven’t done here is replace the air conditioner, which hasn’t worked since we moved in. But for the most part, we’re surrounded by trees and usually there’s a slight breeze so it’s not too bad inside the house most times.
Except for the last seven days which have been hotter than H-E double hockey sticks.
Someone popped in to visit a few days ago and my glasses kept fogging up. I thought, I can’t see you with them on and I can’t see you with them off and I have no idea what we’ve talked about so far.
As a result, I have lost all desire to cook meals or anything that requires turning the oven on. I want a large variety of salads and lighter meals. I want cut up veggies and platters of cold cuts. I want graze boards and lots and lots of ice cream.
I want someone to come by me every hour and mist me like produce.
I did make the Hot Honey Glazed Salmon earlier in the week and then I simply didn’t bother cooking anything again. We had colder breakfasts and lots of sub sandwiches with potato salad and very un-Insta-worthy sausages on a bun more than once. And I’m ok with that.
Any who, how are you coping with the heat? I’ve heard that it’s meant to cool slightly in the next day or so. Fingers crossed!
In the meantime, if you don’t have air conditioning I’m not coming over!!!

Granola is luckily something you can make in one large batch and enjoy for a while. This Decadent Chocolate Granola checks all the boxes; whole grains, slightly sweet, super crunchy and so so chocolate-y. Yeah buddy!!! I could not have loved this raspberry yogurt parfait any more! Healthy enough to be enjoyed for breakfast but decadent enough to eat as a dessert.
I mean, it almost made these hot mornings bearable. Almost.
