We have had so much going on this week, I don’t even know where to start.

First of all, I’m incredibly grateful that my boy is home! He flew in on Wednesday and this mama’s heart is happy. Mostly because I have all of my kids under one roof and that’s such a rare occasion these days. He’s home for a short visit before heading to Australia for the next while.

Eeeesch. This is what you want for them, right? To go explore the world. But man it’s hard when they leave.

Speaking of good-byes, we sadly lost 3 of our beautiful chickens this week. It was another stormy day (go figure) and something got them while they were roaming outside. We were feeling pretty sad about the whole thing.

Argh! Maybe I’m not cut out to be a chicken owner?!

Last week I told you how our sweet Michael Scott was just finding his voice and this week he’s gone.

Also, in between airport trips and dealing with the animals here I’ve been madly trying to fill the freezer in preparation for the start of school. Everyone gets back to routine (I haven’t worked since the beginning of June!) and we need to be super organized. I’m a wee bit crazy about having meals and snacks ready to go which makes the morning and evening go SO. MUCH. SMOOTHER.

I’m sharing a few recipes I’ve been able to put away this week amongst all the craziness (ties in super conveniently to the last 2 weeks of the #everybitcountschallenge too). Below you’ll find delicious Raspberry Baked Oatmeal Cups which freeze beautifully and are delish warm or cold. I’ve also got some Family Favourite Banana Bread and a Downeast Maine Pumpkin Bread that I made, pre-sliced and then froze for a quick lunch snack (we looove this one). Oh, and I couldn’t forget about the Sweet N Spicy Marinated Chicken I prepared and froze. On school nights I throw it in the fridge and the next day I just have to grill or bake it. The sauce is *chef’s kiss* and finger lickin good.

Aaaaaaand lastly, someone I love is getting married next weekend and I’m going to be making their wedding cake! They’ve asked for a lemon lavender cake and I’ll share all the details next post!

In order to soak in the time with my family, before my son leaves and school starts, I won’t be posting next weekend. I’m going to stay up late, cook a ton of food and wash a boat load of dishes.

And love every second of it.

Raspberry Baked Oatmeal Cups

You know my love of oatmeal by now. It’s such an excellent way to start the day! With a little prep you can just grab an oatmeal cup and hit the road. I’ve been making these and prepackaging them in single containers for everyone to take in the morning. They’ve got a drizzle of raspberry jam on top and a few fresh ones inside. BOOM! Breakfast is ready and it’s full of fiber, protein, antioxidants and LOOOOOVE baby!
