Homemade Pierogies {Big Freezer Batch!}, Homemade Super Flaky Dinner Rolls, Grapefruit Chia Breakfast
As I’m typing this we’re hunkering down for the first big snow storm of 2024. We’ve already lost power a few times and I currently can’t see out my front window.
I’ve made a pot of storm soup.
I’ve made a big batch of storm cookies.
And I’m wondering, are storm chips still a thing?!
This might have all blown over by the time you’re reading this, but I have to tell you that I’m not mad about possibly being stuck at home for a few days. In fact, I welcome it.
I love our little spot in the country. I never realized how windy it can be out here. It’s whistling and screeching through the windows all night long. And since this house was built in 1800’s it’s not exactly warm in winter time. It’s a drafty old place that has a lot of winter stories to tell.
When we first moved here I was adamant that we would be removing the wood stove and replacing it with a fancy gas fireplace. I actually bought one and we had it sitting in our living room for a while while I waited for The Mr. to remove the wood stove. But we had so many things we wanted to do first that it never took priority. Part of me thinks he might have been stalling anyway because he didn’t want to remove it in the first place.

Nothing better than a crackling, roaring fire!
This is one of the very few times that I’ll put this in writing but….
He was right.
On a whim we lit the wood stove one cold night and I was totally hooked. There really is nothing like the warmth and glow from the fire when winter is blowing outside. And I promptly sold that gas fireplace and never looked back. Not only has it been a blessing for the heat bill, it’s been a godsend for my mental health. The longer I sit near the fire, the more relaxed I feel. Even the ritual of lighting it each day has become a meditative practise that I really look forward to at the end of a work day.
Anywho, it’s frightful outside and I’m content to be right where I am.
In an effort to publish this before I have no power again, I’m keeping it short and sweet this week. Perhaps you’re having a snowy weekend too? I’ve included two recipes that are a little more time consuming and a winter storm might be the perfect time to try them out!

Every single time I make mashed potatoes the kids ask if I’ll make extra so that I can also make pierogies. It’s such an easy way to use up leftovers. It’s really really easy to do but definitely a little time consuming. That’s why, if I’m making them I’m doing a huge batch! How about you find a really good podcast and settle in for some pierogi filling time?! Heads up, the dough I like to use has to sit in the fridge for a few hours so you’ve got to plan ahead a bit.
