I actually really wanted you to have enough time to feed your starter and make the Herby Sourdough Stuffing Bread I’ve included below. I’ve been making stuffing croutons with it this morning and it smells so darn good in here.
It’s Easter week-end, which means a few days at home for me and some family dinners we happily attend. I’m bringing this Carrot Snackin' Cake to my parents dinner today. I’ve doubled the recipe and swirled that glorious maple cream cheese frosting on top. I’m doubtful for leftovers since we’re such a large crew. We are dessert lovers through and through in our family!
I mistakenly sent a poll to our family group chat to ask the kids and The Mr. what they wanted for Easter dinner at our house this year, and got four different replies. I’ll have to make the final decision which will turn into some teasing about who mom loves best. My son thinks my daughter and vice versa.
Little do they know I love this gal the best.

I’ll spread my Easter magic and find a way to make everyone happy. That’s what moms do isn’t it? And lesson learned, no more dinner polls for me!
I’m looking forward to some extra time at home to clean up outside and blow winter off the coop. The ladies could not be happier about having more free ranging time and they reward us with the most beautiful coloured eggs! I’m literally the happiest person when I go to collect eggs every day. And, with the arrival of spring I definitely have the urge to get some chicks to add to our little roost. Nothing screams springtime like newborn fuzzy little chicks.
Anywho, this chick is off to plan our menu for the weekend. I’ve shared some idea’s here that you might enjoy for your menu too.

These Easy Mini Egg Cookie Bars are, um, EASY. They’re based off of a chocolate chip cookie bar recipe that we looooooove around here. It’s made in one bowl, baked in 30 minutes and hella good warm with a glass of cold almond milk or hot tea. These will not last long in your house!
Easy Mini Egg Cookie Bars- *12 servings
1 egg
3/4 cup unsalted butter, melted
1 cup brown sugar
1/4 cup white sugar
2 tsp vanilla extract
2 1/4 cups AP flour
1 tsp baking soda
1/2 tsp salt
3/4 cup mini eggs, roughly chopped
1/4 cup semi sweet chocolate chips
Preheat oven to 350 degrees and line a 9 x 9 square pan with parchment; set aside.
In a large bowl whisk together the sugars and melted butter until well incorporated.
Whisk in the egg and vanilla.
Add in the flour, baking soda and salt. Use a spatula to incorporate without over mixing. Fold in the mini eggs and chocolate chips.
Bake for 30 minutes. Cool in the pan. Cut into 12 servings.
I cannot recommend these carrots enough. They’re roasted in the oven with a honey glaze that has just the tiniest zing from a pinch of cayenne. They’re so tender, slightly sweet and make such a vibrant side dish! Use organic carrots when you can and leave some of the tops on. The outer peel has a really high concentration of beta-carotene and Vitamin C, so just give them a good scrub and use them!
