Holy cow school is an adjustment, Best Ever Warm Meal Prep Turkey Slaw , Pumpkin Spice Muffins {with Cream Cheese Filling}
I’ve forgotten how exhausting the first week of school is for everyone. For parents and kids, for staff. It’s just super busy and getting back into routine is challenging (but necessary for me).
I’ve really been missing the time to myself in the mornings, so I’ve been getting up a bit earlier to just sit and enjoy the peace. I used to journal during this time but lately I’ve just been sitting in the quiet, listening to the sounds this old house makes while I enjoy my coffee (and sometimes knit). Besides the fridge humming, the dog sighing and the bones of this house creaking, I can also hear everyone outside waking up. Which includes my sweet little ladies, The Professor and all of the other birds who are starting the day. It’s become kind of meditative for me and helps me begin the day with some calm.
I just crave quiet so much these days. Is this a thing for people? I find that going to work or running errands in town can be such an assault on the senses sometimes and I can’t wait to get home to the stillness here. Most times I even can’t stand to have the TV or radio on and I’ll ask The Mr. if we can just shut things off. He’ll respond with Well, what do you want to listen to then?
Just the noise the outside makes, I reply.
I don’t know if that makes me an old person or a wet blanket, but that’s where I’m at these days.
Speaking of meditative, for the past few weeks I’ve been working on a sweater that I adore! It’s called Autumn Alpine and the gorgeous red tones are a hand dyed yarn from Sackville, New Brunswick. It’s rare for me to finish a project so fast but clearly this quiet phase has its perks! This is my first time trying a pattern like this so I’m feeling quite pleased with myself. I’ll be praying to the knitting gods that this fits when all is said and done.
As it turns out, this morning the house is extra quiet while everyone is taking advantage of some extra sleep in time. It’s so cool out which makes being under covers so much more cozy. While they do that, I think I’ll sign off and go knit a few rows.

A student told me this week that Pumpkin Spice muffins were available at Tim Hortons again and I promptly drove there after school to get one. Making pumpkin muffins is a regular thing for me anyway because my kids love them but I decided to go the extra mile and do the cream cheese filling this week. I didn’t want to pipe it in after baking so I froze it and plopped it in before baking. I used to do that when I made ganache filled cupcakes or cookie dough cupcakes when I had the bakery. It’s super easy and will alllllll make sense when you read the recipe. If you don’t want to make the filling I highly recommend making the muffin batter and throwing in a handful of raisins before baking. YUM.
