Hello Friends!
Coming at you all refreshed and energized from my recent trip to British Columbia. It was my first time in Western Canada and I can see why my friend is loving it there.
I had a really short stay in Vancouver where I got to hug my boy too. As tired as I was from the ridiculous airline delays (insane), I would do it all again just for that hug.
I see why my son went out for snowboarding season and never came home. The landscape (mountains and water at every turn, WOW), decent weather and the lifestyle suits him and makes perfect sense. He’s so happy there and that makes me happy too.
That’s all you wish for your kids isn’t it?
My friend was a gracious host and toured us all around Victoria on Vancouver Island. I loved seeing the Harbourfront, Emily Carr House and all of the attractions near the water. For me though, walking the neighbourhoods away from all of that was my favourite part. We spent some time in Cook St Village, a small community neighbourhood full of cafes, restaurants, markets and boutique shops. I was blown away with the amount of vegan, vegetarian and gluten free options.
I don’t know about you but as much as I like the city attractions, I’m just as content to sit on a patio and watch people go by.
I was on a bit of a scone mission while there too (you know, research). And I was lucky enough to be treated to High Tea at The Royal Empress for my birthday! That was such a delicious experience!
Since coming home I’ve been working at recreating an incredible scone I had on my first morning in Victoria. It left such an impression on me that I forced the gals to go back (when our flight was cancelled, a silver lining!) for more. It’s a Dreamy Raspberry Lemon White Chocolate Scone that was insanely good.
Like, really really good.
I’m also including my take on a Vibrant Mango Cabbage Slaw that my friend served us at dinner one night. It’s full of sweet mango and crunchy vegetables and I can’t stop thinking about it!
All in all, travelling with friends is so good for the soul. We shared so many belly laughs and still learned new things about each other (yes girl, you do snore!)

When I was at the Union Pacific Coffee Shop I had my eyes directly on the baking staff to see what ingredients they were using. Lucky for me, both times I visited they had a bowl of the unmixed scone batter chilling in the front cooler. You best believe I took note of what was inside. Surprisingly, they used both shortening and butter in their scones. So you get the flavour from the butter but a much more tender crumb from the shortening. Genius. You’ll thank me all week during your coffee break!
